Breakfast can be erratic. Loud, boisterous (the most important meal of the day, huh?) and sometimes not even there at all. The breakfast stomach steals the spotlight and is tough to please.
And with the holidays coming and piles of candy appearing and reappearing on the odd counter across the house, there will be lots of temptation.
Ever run out the door with nothing but a thirst for coffee and Mr. Sandman in your eyes? I have and it’s no fun.
So, it’s time to start planning better and upping the breakfast game.
Yes, that means pancakes.
And NO, that doesn’t mean filling up on floury sugar bread. We’re cooking pancakes that we’re proud of and we’re gonna eat them too 😀
So, without further ado, here are 3 easy ways to enjoy breakfast pancakes without the guilt
Coconut flour pancakes
Looking to make a treat with a flour that is the greatest of all time? Look no further than these delicious coconut flour pancakes.
Ingredients (this one is real easy)
- 1/4 cup coconut flour
- 1/8 teaspoon baking soda (if you wanna rise)
- dash of salt
- 2 eggs
- Sugar to taste
Simply beat all ingredients together and cook with butter in a skillet.
Typically a recipe like this will include sugar but I find it easier to leave it out of the cooking process and then go back later and sprinkle something like Stevia on top if I need to.
And that’s the great thing about cooking rather than baking. It’s forgiving. You can switch or even leave out ingredients entirely and you still can have (sometimes) something enjoyable to eat 😉
Protein powder pancakes. Perhaps the king of all low carb flours – like Kanye they’re *Famous*
- 2 egg whites (if you wanna go super lean)
- 1 cup almond milk
- 2/3 cup ground oats
- A pinch of salt
- 1 1/2 tsp coconut oil
- 2 scoops protein powder
Take all the ingredients and blend on medium or until the texture is as smooth as you like. You can then put the “dough” in the refridgerator if you want to firm it up or store it for later cooking. Optionally, just pop it in the pan (it might be a little runny). Just add the batter in small batches to compensate. And, like the amazing pancakes that these are, you fry in a buttered pan on medium heat until nice and golden brown.
TLDR: Or just beat it all together, cook ‘em and eat ‘em, like mama used to say.
Last (BUT NEVER least): Fluffy Cream cheese pancakes
Craving some American breakfast cheese?
- 3 eggs
- 1 (3-ounce) package cream cheese, softened
- A pinch of cardamom
- 1.125 tsp baking soda
- 3 tablespoons coconut flour (!)
- Milk to get the batter how you like it
Grease a pan and form and pour these guys into little hand size diameter dolops. Cook until brown.
But, oh boy, WARNING WARNING: these requires extreme amounts of patience while the stick of cream cheese softens. Delicious but not really my cup of tea.
And so, breakfast, like Kanye, is here to stay.
